Is it a Tompouce or a Tompoes?
The Dutch Tompouce, also known as “Tompoes,” is a popular pastry comprised of two layers of puff pastry filled with sweet cream or custard. Its distinctive orange icing renders it a favorite treat during special occasions such as King’s Day.
Since when is the Tompouce made?
The pastry’s origins can be traced back to the early 19th century in the Netherlands. Its name is believed to have been inspired by the character Tom Pouce from a French novel. Over time, it became a more than beloved Dutch delicacy, especially enjoyed during national celebrations as King’s Day.
Make a Tompouce the easy way or at the traditional way
A Tompouce is made of puff pastry and custard pastry cream, topped with fondant or pink chocolate. To make it easily, you can use 4 slices of puff pastry from the supermarket, bake them in the oven as per the instructions. Prepare custard pastry cream using the provided recipe. Place custard pastry cream on two baked puff pastry slices, then cover with the remaining two slices. Optionally, add a layer of whipped cream on top of the custard. Finally, cover the top slice with melted pink chocolate or melted orange fondant.
Recipe Pastry cream, Custard, or as we say “Banketbakkersroom”
Ingredients:
500 grams of milk
50 grams of custard powder
50 grams of sugar. If you find sugar unhealthy or to sweet, use sweetener xylitol
1 vanilla pod
Mix the sugar, custard powder and a bit of the milk in a bowl. Scrap the vanilla for the pod, put in a pan together with the milk and cook it. Take the boiling milk from the heat. Slowly add small amounts of hot milk in the bowl with the custard mix and stir it well, until all the milk finished. Pour everything back into the pan, place the pan back on the heat, and let the cream cook well while stirring until it starts to thicken.

A Crompouce is a combination of a Crossaint and a Tompouce. A “Crompouce” is most tasteful and is delicious variation on the Dutch Tompouce. You can easily make a Crompouse yourself with croissant dough, pastry cream and pink icing.
How to make a Crompouce?
Heat your oven and bake the croissants like you used to do. Cut the croissants open and fill them up with pastry cream, and cover them up with melted pink chocolate or pink icing.
